Today, I tried out Dave Phinney’s Orin Swift Palermo Cabernet Sauvignon. This California style cab did not disappoint. This wine had a high intensity with a beautiful ruby color that gradually transformed into a soft pale ruby at the rim. It had aromas of dark fruit such as plum and black currant with hints of cherry and baking spices. On the pallet, the wine delivered plum, mocha, black pepper, and tobacco ending with a little heat and a long finish. Well balanced acidity and tannin.
The Orin Swift Palermo Cabernet paired nicely with Sous Vide Short Ribs prepared by Chef Jason Klob. A new friend of Southern Vibes Tasting Room and Wine Cellar…it was spectacular. The ribs were medium rare and fell right off the bone.
